Spinach and ricotta lasagne

Every now and again I have a craving for lasagne… well, who doesn’t? What is better than a combination of pasta, cheese and a white sauce all baked together? I re-visited my Delia Smith’s Vegetarian Collection and decided to make this lasagne. I often refer to Delia’s all-in-one white sauce recipe (so simple, just keep whisking!) but I don’t think I had never tried the whole recipe.

As always, lasagne takes longer than expected but this one was good. I liked the addition of the blue cheese to give it some tang and I love pine nuts. Wilting spinach did take ages – perhaps using defrosted frozen spinach would have been better without affecting the taste…
