Flicking through Delia’s Vegetation Collection (looking for her ricotta and spinach lasagne recipe) the book opened up on this cauliflower soup recipe. I love cauliflower especially when combined with cheese.
I won’t write much but that I really liked how the stock for the soup was made out of the cauliflower leaves and stalks – I’ve never really known what to do with all the leaves from a cauliflower, and they usually go straight into the compost bin. At least this way they got used before being thrown out!
Very tasty. I used some Stilton rather than Roquefort… Not that you can tell from the picture!
