These scones were super easy to make and taste delicious. The original recipe, from Homesick Texan had bacon in it, but obviously I left that out. If anyone wants to try the recipe and you don’t have cups, then 2 cups flour = 10oz, 1/2 cup grated cheese was about 1 1/2 oz, a stick of butter is about 4oz, 1/2 cup chopped cherry tomatoes was about 3oz and 3/4 cup buttermilk is 240ml.
I used a mixture of red and orange cherry tomatoes and just plain old cheddar, but I suppose other strong hard cheese would work well. They were not too dry, as sometimes scones can be, but I suppose that the tomatoes helped. Oh, and in the original recipe Homesick Texan calls them ‘biscuits’, but to me, having made them, for UK readers they are definitely savoury scones!
I’m freezing some of them to see how well that works so I’ll add an update about that.
