I love aubergines so was please when A Girl Called Jack posted a few aubergine recipes at once. I chose this aubergine and kidney bean burger recipe to once again try to make a good veggie burger. I had to add quite a bit more flour than the recipe said in order to get the right consistency but I liked how these turned out – might also have something to do with the Ras el Hanout I used instead of cumin.
I had extra mixture so I’ve frozen them to have at a later date.
I served mine with sweet potato wedges and in pitta breads. Very good!
