I’m sure I may have said it before but I’m not a huge pea fan. However, Pret were giving out free samples of their new chilled soup range, one of which was pea and mint and it was completely delicious.
So, I thought I’d make my own. I found this recipe on BBC Good Food and gave it a go. It was really simple and quick to make. And I guess if there was no sour cream added, it would be pretty healthy and low fat too. I tried it before adding the sour cream and tasted good so I think could be omitted in future.
The soup did require a lot of mint. The mint plant I bought for it has been almost stripped bare.

- River Cottage
- spring onions
- sweet potato
