I was listening recently to a BBC Food programme podcast on frugal food and heard about A Girl Called Jack blog who blogged about the food she would make on her £10-a-week budget for her and her son. I was browsing through her recipes and was inspired to make some of them – the first one is this quick and tasty mushroom soup.
It is very simple to make, but I can’t admit mine was as inexpensively made as hers. I followed the recipe to the letter, with the addition of 1 1/2 tbsp of red lentils to give it a little bulk and I also topped mine with some cubes of blue cheese I had.
Cheese was not needed and the result was very good. I look forward to trying her cheesy peas and pasta recipe later in the week.
