I made this soup last week once I’d tracked down some fresh sage (my local Morrison’s is pretty poor on the fresh herbs). I also had to take a photo whilst it was still in the pan as I was afraid the bright green colour would fade (as cooked spinach tends to).
This soup is really delicious. Fresh sage and 3 cloves of garlic and you can’t go wrong.

Sadly no link to the recipe. This came from 101 Veggie Dishes by BBC Good Food but it was essentially: cook 2 red onions, add 3 garlic cloves, 2 large potatoes, and 15g sage leaves. Sweat and then add 2 1/2 pints stock, simmer til potatoes cooked and then add 250g baby spinach before blending.
