I made these muffins the night before my flat warming. Pretty easy to make and turned out quite well. Undecided if I will make again, not as flavoursome as I’d like, but are nice with the fruit element. The recipe said makes 10 muffins but I managed to get 12 from my mixture. There are also comments on the BBC Good Food website (where I got this recipe) that says you should double line you muffin tin. Just in case you encounter the problems other readers did!
The only variations I did to this recipe was not to use rapeseed oil (I didn’t have any so I used sunflower oil instead) and I used an Apple Pie Cinnamon spice mix, rather than just plain cinnamon. Not sure how the oil might have made a difference, perhaps more flavoursome with the rapeseed? Who knows!
