Just a quick post about one of the dishes I made from River Cottage Veg Every Day last week… I had used some squash earlier in the week so I needed a recipe that used the rest of it. This looked simple enough and it was!
Just roasted squash with sage, fried thickly cut mushrooms, crumbled blue cheese, rocket leaves and dressing.
I omitted the dressing & to make it more filling, I had some polenta on the side. Here’s a pic…
