Recently I went to a friend’s house for lunch and was served a most delicious dish: broccoli and cauliflower cannelloni. You wouldn’t have guessed it was broccoli and cauliflower, or that that combination could taste so good! But it did.
So I did some googling and found the recipe (a Jamie Oliver one) so I could make it for my parents when they came to visit.
It’s basically cooking the veg at the same time as frying some chilli, garlic and anchovies, then adding the cooked veg to the frying pan and cooking until all mushy. Stuff this in some cannelloni tubes, and put in a dish with some passata, a topping of creme fraiche, and Parmesan & mozzarella cheese. It can be made without anchovies too, and I don’t think it requires any substitute, apart from maybe some added salt or stock to the mixture to add that depth.
Bake in the oven, serve with salad and you get the most incredible dish. Might look something like this:
