So it’s been a while since I posted, but I have a few stock piled so will be posting a little more frequently.
This is one of my favourite dishes, and one of my family’s favourites too! First discovered in the book Good Housekeeping: Step by step vegetarian cookbook. It’s a super easy and surprisingly filling dish.
Just some onions, garlic, chillies, jerk spices fried off and some chopped potato & red pepper added. Tomato juice (or tin of chopped tomatoes), stock and kidney beans are added before simmering for 30mins. Melt in some creamed coconut (or, if you can’t find the solid creamed coconut, a bit of coconut milk might do) and then add spinach at the end.
You can top it with avocado, sour cream and spring onions which makes it especially tasty. And here it is… Not the best photo – looks better in real life!
Yum! I would make this more often but it’s hard to make for one and doesn’t freeze well. You could try sweet potatoes instead of white ones, or different types of beans.
