I came across a recipe for rhubarb and ginger muffins on Jamie Oliver’s website recently and had been dying to make them. Unfortunately, until this weekend, I couldn’t buy rhubarb in my local Tesco’s. But on an impromptu visit to Borough Market to get some cheese, I saw new season rhubarb and took the opportunity. The fact that these muffins coincided with Mother’s Day (Jamie called them Mother’s Day muffins) was just a happy occurrence and were delivered to my friend who had recently become a mum.

And now the “after” shot, just from the oven. After cooling, the sugar topping really crisped up and was really very tasty!
